Our goal and commitment is to offer a quality alternative to conventionally prepared foods. We always use the best natural, organic and gourmet products and ingredients available. We believe proper cooking techniques and ingredient selection is the key to developing exciting, natural foods with distinctive bolder flavors, brighter colors and rich textures.
All food at the 9th Street Bistro is prepared entirely on the premises by our chefs. By using organic and natural products, whenever possible, we minimize the use of preprocessed or prepackaged ingredients in all of our cooking. We use only certified organic or natural meats and meat products. The flavor in our food comes from the selection of quality ingredients rather than oils and fats.
Our menu reflects an eclectic blend of comfort foods with seasonal changes that empower us to take advantage of the freshest, local produce. We offer many traditional favorites and homey foods prepared in a cleaner, healthier and in our opinion tastier way!

Bistro manager / Executive Chef
Chef Merry is our Head Chef of the 9th Street Bistro. She is a fellow Spokanite and local culinary graduate with a passion for flavor and exceptional service. Her knowledge of vegan and vegetarian diets as well as her creative uses of ingredients is a great fit for HUCKS! Her favorite ingredients to use stem from her Italian heritage: garlic, vine-ripened heirloom tomatoes, and aged pecorino cheese. She was looking to find a locally owned, fresh ingredient restaurant to call home and we are so happy she found us!
