Cucumber Cooler Cocktail

Ingredients

3 large cucumbers

1 lemon

½ cup 64 Reykjavik Dill Aquavit

¼ cup Sheringham fresh Lemon Liqueur

1/2 cup simple syrup

Fresh dill (for garnish)

Ice

Instructions

  1. Peel and coarsely chop 2 cucumbers, puree until smooth. Press cucumber puree through cheesecloth, discard solids.

  2. Peel the remaining cucumber and the lemon to use as garnish.

  3. Use cucumber peels to line the inside of each chilled glass. Fill with ice.

  4. Mix lemon liqueur, dill aquavit, simple syrup, and cucumber juice in a large pitcher. Mix well. Add ice.

  5. Pour into glasses.

  6. To garnish, use from dill, and sweep the lemon peel around the lip of the glass before adding into the beverage.

Makes 4-6 Servings.

Variations

You can easily make this a lower sugar option by omitting the simple syrup and replacing it with the sweetener of your choice.

To make this a non-alcoholic mocktail, simply replace the spirits with soda water and add a lemon slice and more fresh dill.
