Blueberry Muffins



2 1/3 cups Cole’s Blue Label Flour Blend
1 tablespoon baking powder
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon xanthan gum
3/4 cup granulated sugar
8 tablespoons butter, melted and cooled
1/2 cup plain whole-milk yogurt
3 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups blueberries


1. Whisk Cole’s Blue Label Blend, baking powder, salt, cinnamon, and xanthan gum together in a large bowl. In a separate bowl, whisk granulated sugar, melted butter, yogurt, eggs, and vanilla together until well combined. Stir egg mixture into flour mixture until thoroughly combined. Gently fold in blueberries.
2. Heat oven to 375 F. Spray 12-cup muffin tin with vegetable spray. Put batter evenly into prepared muffin tin. Bake until muffins are golden and a toothpick inserted in center comes out clean, approximately 16-20
